Raveneau is one of the greatest producers in Chablis. Even though his wines take a long time to age, there is a unique flavor in his younger wines. His oak-aged wines seem to have a very different texture and aging curve. They are lemon custard-like in their youth, but with age they become extremely buttery and honey-like. Les Clos (which is his best wine) is big, rich and luscious with great finesse and balance. Blanchot is the most delicate and aromatic Grand Cru. Valmur is very similar to Les Clos in power, but has the perfume like Blanchot.

Meursault is most known for its white wine made from calcareous soil rich in iron and magnesium. The best vineyard is Les Perrières followed by Les Genevrière and Les Charmes. The soil in Les Perrières is the lightest and stoniest, therefore the wines are very minerally and long lived. The wines from Les Charmes are considered the fattest and richest. These wines are very fragrant and drink well in their youth. Les Genevrière has the opulence of Les Charmes and some of the steeliness of Les Perrières. The best producers are Comte Lafon, Coche Dury, Pierre Morey and Jean Marc Roulot.

Puligny-Montrachet is the greatest white wine-producing commune in the world.The greatest vineyards lie at the southern end of the town, overlapping Chassagne-Montrachet. Even though the vineyards are smaller compared to Chassagne-Montrachet and Meursault, it is a place of pilgrimage for many wine lovers and Chardonnay producers who try to imitate Puligny's Terroir. The best Premier Crus are Pucelles, Referts and Folatières. The flavor profiles are ripe pear, tropical fruits, and coconut. The best producers are Domaine Leflaive, Paul Pernot, and Carillon.

Chassagne-Montrachet is the last great commune in the Côte d'Or. White wines from this commune demand higher prices than any other. The wines from Chassagne-Montrachet are the most distinctive. They are bold and powerful like Puligny-Montrachet, but have a softer and rounder texture. The best vineyards (Les Chenevottes, Caillerets, Vergers, Morgeot and Ruchottes) are on the upper slopes of Chassagne-Montrachet. Morgeot is considered masculine and assertive, whereas Caillerets, Vergers and Ruchottes are softer and feminine.

The historic town of Gevrey-Chambertin is known for producing the most powerful wines in Burgundy. Power, muscle, and rich, jammy fruit – tending to start compact and needing time to unfold broadly – characterize these wines. Some of the new producers include Denis Mortet, Geantet-Pansiot, and Claude Dugat. While these young producers have taken a modern step in winemaking, the old-timers have also learned to keep pace. Producers like Domaine Armand Rousseau and Joseph Roty (making wine since 1710) recently have been producing some of the most interesting and long-lived wines from their prime vineyards.

The wines from the village of Morey-St.-Denis are often described as being lighter than Gevrey-Chambertin and firmer than Chambolle-Musigny, depending on which side of the village the vineyard is located. Geologically these vineyards are very rich in minerals. The Grand Cru vineyards, moving southwards from the border with Gevrey-Chambertin, include Clos de la Roche, Clos St.-Denis, Clos des Lambrays (entirely owned by Domaine des Lambrays) and Clos de Tart. Fine wines from Domaine Dujac, Robert Groffier, Hubert Lignier and Christophe Roumier are giving Morey-St.-Denis the recognition it has long merited.

Wines from Chambolle-Musigny are believed to be the most charming in the Côte de Nuits. A fine Chambolle has a rich, velvety elegance that rivals the finesse of Vosne Romanée or the power of Gevrey-Chambertin. There are only two Grand Crus (Bonnes-Mares and Musigny) in this village, and some exceptional Premier Crus (Les Amoureuses and Les Fuées) worthy of promotion. These chalky vineyards give the wines higher acidity and elegance that expresses itself in aromatic purity and finesse without the power.

Bonnes-Mares is considered the stepbrother of Musigny; it is often sturdier and less graceful.

Perhaps the most representative examples of Pinot Noir in the world come from this commune. Stylistically the wines lie between the sturdy Gevrey and the delicate Chambolle-Musigny. These wines are often described as opulent, silky, and satiny. Vosne’s Grand Crus are capable of producing quintessential Burgundies with amazing depth and refinement. The Grand Crus range from Romanée St.-Vivant, the lightest in body but very aromatic, to Richebourg, the most massive and rich. Domain de la Romanée-Conti owns the vineyards of La Tâche, Romanée-Conti, and parts of Échézeaux, Grand Échézeaux, Romanée St.-Vivant, and Richebourg. These are considered to be some of the most long-lived wines in Burgundy. Even though most of these Grand Cru vineyards are fairly close to each other, the flavor profiles vary widely. The wines of Domaine de la Romanée-Conti are considered (by many) the greatest wines in the world. These wines of supreme excellence offer the balance of power and finesse that both seduces and excites the senses. These are considered to be some of the most long-lived wines in Burgundy. Even though most of these Grand Cru vineyards are fairly close to each other, the flavor profiles vary widely. The Domaine's philosophy is to achieve L'expression le plus pur du terroir. The wines from Échézeaux and Grands-Échézeaux are usually the lightest and mature earlier than the others. Romanée-St-Vivant is usually soft, feminine and very aromatic. Richebourg is always big, fat, ripe and spicy (clove and black pepper) and takes a long time to come around. La Tâche is considered the crown, whereas Romanée-Conti is the perfect diamond on the crown.

Nuits-St.-Georges is the longest commune in the Côte d’Or, extending for some five kilometers. Many tasters characterize Nuits as earthy and rustic.
